For a small amount of non-alcoholic mead, take on quart spring water, one cup honey, one lemon cut into slices, and a half teaspoon nutmeg. Boil in a non-metallic pot, removing the scum as it rises with a wooden spoon. Add a pinch of salt and the juice of half a lemon. Strain and cool. Drink in place of alcoholic mead, wine, etc.
